2001 olds bravada runs hot after an oil change at EZ Lube and as your driving the oil gage starts at the middle or 60 and lowers to just about 40 with the engine getting hot and when you pull over and check the dip stick it is extremely hot with the car on oil seems to be missing but turn the engine off off and the oil reappears no oil leakage

Oil will go down while the car is running because it is being distributed throughout the engine, but when you turn it off the oil drips back down into the oil pan. But you should still make sure your oil is up to the proper level. Unfortunately there are idiots working in these places and some even forget to put the drain plug back in and have ruined many of engines. Not saying they all are. But we have the final responsibility. To oversee our vehicles. Any other questions, feel free to ask. Also please clear up the statement about your vehicle being "hot" I dont think I understood you clearly.
