1995 Mercury Sable overheating

My car has been over heating but it only stays in teh red for a few minutes and goes down. But it does that non stop. Theres water in it. I am changing the thermostat and need to know which way it goes in? But if that doesnt work. What next?

The bottom part with the spring on it goes towards the motor.
