1996 Other Jeep Models overheating spikes

1996 grand cherokee, within last two months have replaced water pump, radiator, and thermostat, and coolant. Last couple of days, very intermittently the check guage light comes on and the temperature guage spikes to red for a couple of seconds and then drops to normal. It has been running according to the guage around 220 or 230. What could some possible issues be causing the spike in temp.

Could be the coolant temperature sensor or the engine temperature gauge switch out of calibration.

Cracked head
faulty headgasket
check if the coolant fan working
