Temp gauge never gets above 120 degree's. Installed new temp sending unit with no results. Runs O.K. And has decent cabin heat. Not sure if car is actually running cool or issue with gauge?

It could be the coolant temp sensor that feeds the info to the gauge that would in turn effect the reading on the dash.

You have a bad or cold temp thermostat. Change it with the warmer temp thermostat.
If you live in a hot summer climate you may want to throw the colder thermostat in the summer months to prevent any type of overheating while idling
