In the last month I've installed a new radiator, water pump, belt, top & bottom hoses, and 3 new thermostats and flushed the system and with the thermostat installed it runs hot, when I take it out runs fine, WHY?

How hot is hot? With the correct 195 thermostat the temp should run about 200-205 degrees.

If it is running hotter it could be a partly plugged exhaust, leaking head gasket, or even the wrong water pump.
