Just installed a rebuilt motor and I put all new items on it like: water pump, sensors gaskets, wires, plugs hoses, thermostat, radiator is less than a year old. When I fill the radiator while running it shoots it out the top even if its not hot or full and it gets over 210 then comes back down is that normal because I dont want to ruin my new motor

Yeah, sounds like you have a 210 degree therm. So it will only allow it to get that hot, then the fan will come on to bring it down, 210 is just the hottest it will allow it to get before the fan comes on.

An engine will still get that hot when its cool or cold out. So dont panic, keep me posted though
