1989 GMC C1500 Truck Stutters while driving

When I am driving and let off the gas pedal then start pressing back down on gas pedal the truck will kind of stutter. If I press down on the gas harder it will downshift and blow right thru that stuttering. New cap and rotor, plug wires, don't know on plugs. Truck runs great other than this.

Was there any resolution to this problem? I have a similar issue. I have a standard 1989 GMC with a 350 and it spits and sputters on acceleration but runs smooth at constant speed or throttle settings. I've changed the plugs, fuel filter and added fuel conditioner. What is the fix?
