My dashboard gauge reads "cold", even after the engine has warmed. I've replaced the thermostat, but now. Any suggestions to proceed?

Sounds like either your temp sensor on your engine or your dash unit may be defective. Or wiring.

Do you have check engine light on?
And if so have to scan for codes
if no check engine use a scanner tool select data and check what it say for engine temp
An out-of-calibration sensor may not set a trouble code, but it will cause driveability problems.
