When I close my doors it seems like they don't latch properly. I hear a lot of wind noise because of this. Is there any adjustment in the latch or is this a replace it to fix it sort of thing?

First thing to do is buy the haynes manual. In the body section in the back it will tell you how to check and adjust the door striker. I have restored multiple vintage mustangs and a few have the wind noise that you speek of. Try this: Take your knee and put it at the top of the door panel in the middle of the door(above the pull handle and window switches by the window felt stips). Grasp the top of the window frame with both hands and using your knee to pull against, apply pulling pressure. Don't overdue it. Pull it lightly, Then test drive. If not enough pull over and do it again.
