When I start the car, the seat belt safety alarm will sound off 5 "dings" pause and do this 5 times, and if we drive a distance it will sound again, 5 dings, 5 times. Any idea what it is trying to tell us?

It is trying to tell the driver to fasten his seat belt. If it is, the switch in the reciever must be bad or there is a poor connection in the wiring to the receiver. If you follow the receiver down, you will see wiring for the alarm. Make sure it isn't damaged or disconnected at any point.

Could it be anything else other than seat belt? When I buckle the belt the light goes off in the dash, but the alarm keeps sounding.
Could it be a code of some sort?

If the light goes out, the only other thing I would recommend having checked is the body control module (BCM). It requires special test equipment.
