1987 Ford Escort gas pedal feels non existant

Hello I have a 1987 Ford Escort Pony 4spd. It has a throttle body. When I first start the car and take off it runs fine but if I shut it off to go in a store and come out and restart the car it seems like I don't have a gas pedal. I have put a map censor on it and plugs, plug wires, and many other parts. The car has a shift light to indicate when to shift but when the car isn't running right the shift indicator doesn't come on. It bogs real hard when I'm driving it. I can't accelerate very quickly when it is doing this. Please help me out

What is the idle at when first started compared to when restarted? Is the check engine light staying on? Sounds like a fuel trim issue, when was the last time the fuel filter and oxygen sensors have been replaced?

My check engine light isn't on at all. Someone told me it could be my coil but I haven't changed my oxy sensor either
