I was wondering if you could swap the engine of the Corolla S with a 2.0 VTEC Turbo out of a Honda Civic Type R (newer model)? Also, if you can’t, then I would like to know what the best swap option in terms of horsepower?

Could that swap be done? Yes. Can it be done so that you end up with a street legal car in the end? Not without a lot of work and money. Modern vehicles make swaps very difficult because of the way they integrate all the pieces with the vehicle. So, in order to do the swap, you asked about you need to swap over pretty much the entire front harness, engine, transmission, and then deal with other pieces that interface with those modules. As far as other swaps, they all more or less have the same problem with all the electronics. Even something that used to be simple like adding larger injectors or different cam are thwarted by all the electronics. You will see videos out there showing swaps and custom tunes, but if you notice you never see them get inspected or put on the road legally. They do show them at tracks or "on a closed course" though. Now if you have a vehicle that is exempt from all the laws and such, you can do a lot, but even then, it's not a simple process.
