While driving the engine started knocking it shut off and will not start

I was driving back from the gas station one day the engine started knocking not 10 minutes later it died and now it won't start. That was after having to change the speed sensor and at the time I did not know that the thermostat wasn't working.

If it was an engine knock due to a spun bearing or other lower end knock and it will not start after shutting off on its own, then I suspect the engine is locked up. Running for 10 minutes with a knock is long enough to get it to seize.

Does the engine even turn over when trying to start it or does it just click?

What I would suggest is trying to turn the engine over by hand using a wrench on the crank pulley bolt to see it is locked up.

Or you can change the oil and check for metal but this is not as definitive if the engine is locked up.
