The door panels and center console of my truck are extremely plain. So my question is, what years, and models can I easily bolt off/bolt on to upgrade them? Again thanks for taking the time to read this and any information I received is greatly appreciated.

Welcome to 2CarPros.

The door panels aren't as much of a concern as the center console. I would say you could go a couple years back or forth on the doors. However, I would recommend keeping the center console the same year.

The best way to know for sure would be to call a local salvage yard and see if they will let you browse through the trucks to have an actual visual because there are several variations in trim levels on these trucks. It can be a real pain sometimes ordering these as a dealer tech at the parts counter!
