1997 Dodge Intrepid over heats coming out of over flow bott

The car keeps loseing antifreeze out of over flow bottle I change thermostat and there is no antifreeze in oil I start it and when it gets hot the water surges up and down in over flow bottle

With high mileage, a leaking headgasket will cause combustion pressures to enter the cooling system but may not allow it to enter as much on the intake(vacuum) stroke. You can test it a couple of ways.
Maybe a cylinder head crack also. It is common and a set of gaskets fixes it most of the time. Check it for that using a pressure tester or engine coolant combustion tester kit. It's being burned through the exhaust many times so you won't see it accumulate in the engine oil.
