Coolant leak

1. Got a leak I was going to do a coolant pressure test, but was wondering if having the heater core bypassed if it will still be able to be done?
2. And since the radiator has no cap, where do you connect it to? Overflow tank?

Yes, even with the heater core bypassed, it is still a pressurized system. Yes, you test it from reserve tank. That is not just an overflow for that system. It is pressurized and part of the cooling system.
