When I turn my AC on, there is a visible mist or gas coming from the air vents. If the AC is off, there is no visible gas, if the AC is on and I back the hot-cold dial off of the coldest setting, the mist ceases. There is no distinct odor coming from the gas and it hasn't affected my driving, but I'm curious to figure out what this is.

What you are seeing is condensation from the moisture the AC is removing. Check to see if drain tube is letting water out on pass. Side. Also on humid days if you are operating AC on outside air mode it will draw moisture in and you will see the mist. Run the AC on recirculate mode
Hope this helps
