2000 Chevy Truck Loss of power under load and at initial st

My c/k 3500 7.4 hesitates for a short while after restarting from refueling. It also loses power under heavy load. I pull boats that weigh up to 14,000 lbs. And it only seems to lose power while pulling the heavier boats or when heading into a stiff wind. I have replaced the fuel pump with a Bosch when it failed and have replaced the pre cat o2 sensors with OEM. I get a lean mix code from time to time that does not correlate to the loss of power. The truck runs fine as soon as I unhook from the load. MAF? ECM/PCM? Failure.

Ok I would like you to ohm your coolant temp sensor. Now this should be in or near the thermostat. It has a two wire plug in on it. Simply unplug it and ohm the sensor and do this when the truck is cold. Then get back to me with the ohm's and the air temp at the time of the test.
