When I turn my air conditioning or my defrost on it brings my engine rpms down in surges. It does this so bad that sometimes it makes the car die. It also has affected my oil gauge in that it will make it go down to nothing if it is idleing, but this is not all the time with the oil gauge.

The throttle body is probably very clogged with gunk, when you turn the ac on the RPM's probably decrease way below 600 RPM's, which isn't enough to keep the engine running. A local repair shop can fix this or you may be able to do so yourself.
