2000 Chevy Tahoe motor oil cooling lines

2000 Chevy Tahoe V8 Two Wheel Drive Automatic

Had a oil pan oil leak and had the dealer to replace the gasket but still had leak so now they told me it is the oil cooler line seal. Could that have been damaged when replacing the oil pan gasket?

It could have, but chances are it wasn't. They have no need to remove it when replacing the pan gasket.
