I just changed my head gasket, intake manifold gasket, and valve cover gasket. My engine is now taping up top only after I let it run for a while, when I am driving and come to a stop my oil pressure goes done as if it doesn't have enough oil. Yes I did changed my oil. Why am I losing oil pressure? Could it be my oil pressure switch or knock sensor?

The tapping is probably due to low oil pressure. The low oil pressure is probably due to a bad oil pump. The oil pump may have been damaged by debris from the head gasket replacement. Make sure you used the proper head gasket.
