Can you disconnect a camshaft sensor and drive?

No. The engine requires the input signal from the cam position sensor to set ignition timing amongst other inputs.

Can you jumper the sensor out?

No you cannot. The ECU needs the electrical impulse created by the sensor to feed data to the system.
