Is it a northstar powertrain, or 4.9l? This may make a difference in the possibilities. A couple of things to check, is if the ISC pintle is retracted all the way(if there is space between it and the throttle cam, this would apply to both engine config's. Can you keep it running with throttle opening, when it starts to stall? Another possibility, relating to northstar, is the egr valve sticking open creating a large vacuum leak. Often times this results in a stall after cruising speed, and stopping.
