1999 Cadillac Concours thermostat

Can I use car without thermostat. Temp. Goes from mormal to almost red zone on gage for a minute then back to normal. I changed thermostat, water pump, belt still same problem. Hoses look good. Before this temp. Stayed on normal all the time.
