Started having a problem with my front left brake caliper. Started sticking to the disc and giving off a bad smell. Got worse and wheel would not turn. Mechanic friend blocked off the fluid and depended on the right side to work as a temporary fix. 2 days later and the right side Started doing the same. Started with a bad smell and then the pads sticking to the disc.

Ended up stuck on the road as the brakes which was now only working on the right side sticked to the wheel and didn't release. Stood for about 15 mins and then I could drive again. Wheels moving. Just got home and didn't drive for about 5 hours or so. Got into the car to head to the store and felt a very soft pedal, sinking easily. Driving for a bit longer and the pedal started getting harder again.

What could be the issue? Both calipers packing up at the same time?

The calipers are probably okay, you have a bad brake master cylinder, it is not returning to the "neutral" position and holding a little bit of pressure on the system which the front sees first. To be sure when the brakes are locked up loosen the nuts on the master cylinder three turns each and the wheel should start to roll again. This is telling you the master is bad or the pushrod from the booster is not returning fully. Please go over this guide to see what I am talking about:
