Could changing the plugs cause the coils to burn out and cause the car to go dark? No light, no clicking no nothing?

No, the plugs wouldn't cause this. Have you rechecked to make sure the battery terminals are clean and tight? Have you checked to make sure there are no blown fuses? Did you leave anything disconnected when replacing the plugs such as a ground strap?
Let me know. Also, check the main fuses under the hood. Maybe something was shorted when working and it blew a fuse.
