2006 Explorer cooling and heating problem

I have a 2006 ford explorer and the cooling and heating has been acting funny. When im driving the gauge keeps going up and down, sometimes it goes all the way up to overheating but the car isnt overheating do I just need a new thermostat?

Sounds like it and also test the engine coolant temperature sensor-

Those are symptoms of an engine getting air pockets in the cooling system. I would suggest pressure testing to cooling system to find any leaks.
