Are both the upper and lower radiator hoses getting hot?

The car doesnt overheat until the water gets low in the radiator. So I would assume it flows through the engine and system. Just doesnt seem to return from the overflow tank

If the coolant is getting low then you have a leak somewhere. You also need to see if the upper and lower hoses are getting hot then you know your getting flow thru the engine.

Also possible I have a crack in the overflow and the water just leaks out as I drive, sucking some back into the radiator but losing some as it takes a few days for the water level to f=get low

Your welcome get a coolant pressure tester and pump the system and find that leak.
