I have a 2005 dodge caravan that occasionally all the lights and electronics go crazy. It starts with the dashboard. The gauges will reset themselves (they will start flicking back and forth. If the radio is on it will make a popping sound as it too loses power and then the power comes back. And today when it did it the air condition started blowing warm air without the air even being on.

Make sure battery terminals are clean and not corroded. Then check battery for condition including load test. Auto parts tires stores do for free then have a pro scan it it may be a module shorting out

So I took the van in and the mechanics had it for over 7 hours, and there diagnosis was they have no idea what is wrong with the car.
I am baffled as to how they have no idea what is going on with my vehicle.

Then it will need to be checked while the electrics are doing what you say they are as it's an intermittent problem.
