I have a 2000 GMC Jimmy with 4.3 motor When you hit the gas it sputters and almost killls. I have changed the plugs and fuel filter.

The first thing you need to do is test the fuel pressure using a gauge. This is a high pressure system that is very pressure sensitive. It requires a MINIMUM of 55 PSI at all times.
