Replacing the AC evaporator

I have a 2000 Dodge Dakota quad cab 6 cylinder I just had the ac unit checked because it only blows hot air the certified station did a dye test and found that the evaporator to be leaking and quoted a cost of $1200.00 to fix. Can a lay person like me replace the evaporator? I know that the dash has to come apart, is there a good detailed manual that I can purchase showing how the dash comes apart and replacing the evaporator?
