Why does my car start to stutter when I reach 60mph or 3000 RPM but when I give it more gas it stops?

If the check engine light has come on, have the computer scanned to identify trouble codes. Most parts stores will do it for free. It sounds like a throttle position sensor issue, but that is a guess without the engine code.

The check engine light has never came on. When the car does this, as soon as I push harder on the gas it stops

Have the throttle position sensor checked. I would also recommend checking for vacuum leaks.
