A short while after I replaced my fan clutch and water pump my thermostat would go from cold to normal while driving. I have replaced the thermostat twice. What else could it be?

Ok, thats new information.

Did it overheat before you changed the thermostat? If it did, you may have damaged the head gaskets and what you see is air in the system.
