Over heating

I have a jackaroo 3.2 v6. When driving on long trips the temperature seems to get high when putting the air con on. I've replaced the thermostat that doesn't seem to help. I'm also wondering what type of coolant I should be using hoping the mechanic has used the right one when I got it serviced 2 months ago. This problem has only started since the weather has gotten hotter

Make sure your fins on your radiators are not dirty!

And your radiator fans are working? You didn't say whether it heats up sitting or driving fast?

My radiator fan is working, doesn't seem to over heat when just sitting only when traveling at 80km or more ao long distances starts over heating when driving for over 45 mins

No hose's are leaking or changed shape of any form. Radiator is flowing

I would also be checking for a part blocked radiator, this can be checked by a radiator repairer, a back flush will not be enough to clear any blocked core tubes.
