I would start with basics. How old are the plugs, wires, cap and rotor? The fuel pressure needs to be verified and the spark needs to be checked.
Are you referring to when you let out the clutch for the jerking?
As far as the noise, without hearing it, it is almost impossible to pinpoint but one thing comes to mind, the shield on the cat converter was common for noise.
