2003 VW Jetta Wolfsburg, 1.8 Turbo, Auto Trans, 61,000 Mi. I had replaced the water pump and timing belt and am now registering a DTC of P0340, and have been told I am probably off one tooth on the timing belt. The car runs fine. Is there a way to adjust the timing belt without hanging the engine and removing the engine mount and mount :( bracket on the engine?

Unfortunately not. Sorry to be the bearer of bad news. The timing belt is a critical function of your engine, and must be repaired carefully. The only thing I can advise is that you be sure to adjust it a few times at TDC before fully replacing the motor mounts and whatnot when you get around to it. :
