2004 Nissan Sentra Fueling

2 Months ago my check engine light came on for no apparent reason. That following Sunday I went to gas up for the week and the pump kept kicking off as if the tank was full, but I know it wasn't. Looked up the issue in the cars manual and did what it said; which was to be sure the cap was tight, don't drive to fast etc. I still have the problem, it takes 15 minutes if I have the patience to fill my tank. And the check engine light remains on. What can I do?

Start by checking the check engine light. We need to know the code numbers in the ECM to make educated guess. Some Autozones still offer free OBD-ii scanning, if there is none in your area, ask one of CSK/O'Reilly store associate which shop that they have partnered with offering free diagnostic check.
