The car will start up and be fine for between 5-15 seconds and then the idle will oscillate from between 1300 and 1800 rpms.

Is the check engine light on? If it is on and the DTC is P0505 it is a faulty IAC valve.

Thats a good call, I would also do a good throttle body cleaning, and if any other diagnostic codes bring them to me and I will look them up
