The car will run ok for a week or so, then out of nowhere, the car will idle rough and will run very sluggish and cause the muffler and converter to become very hot with gassy smell from the exhaust. A day or two later the car runs ok, until the above happens again. Where do I start looking.

Check the fuel pressure and report back your readings-could be the engine is dumping unburned fuel into the exhaust- the end results the substrate that carries the catalyst melts-That's why its heating up
