Generally after driving my truck for a few minutes the dash thermometer reads 200 degrees. Recently my thermometer has been showing higher temperatures, 220-240 on the highway after warming up, though not red-lining at 260.

First instinct was to check the coolant, which I noticed was a dark brown color instead of the usual yellow.

I haven't investigated further, asking you guys what I could fix/replace myself before I see a mechanic.

In that case, i think its time your coolant system has a flush. complete flush on all coolant components.
