1990 Other Chevrolet Models PLEASE HELP!

I just bought a 1989 chevy 1500 pick up the previous owner swaped out the motor and put a 5.7 v8 350 small block TBI motor in it. It ran great the first day we got it then the following day it wouldn't start and started smelling like fuel. We replaced a sensor that was telling the engine that it was running cold even when it was hot so the problem was fixed or so we thought,

That following day we replaced the spark plugs and took it out for a drive and it felt like we where losing power during acceleration it never does it sitting still or idling or in park only when its in drive or reverse. We took off the edlebrock air intake from the top, to see if we could see anything when we started it absolutely nothing so we took it out around the block to see if it would act up and it died and wouldn't start it doesn't smell like its getting tooo much fuel but it feels like its just not getting any fuel at all. Fuel filter was just replaced. Any idea's Please help we are stumped. ;.

First you said the engine had been replaced. WAs it also a 350? Then check your fuel pressure. With stock TBI it should have 11# of pressure. If it does, then the fuel problem should be ok. Then check the catalutic converter. Remove it and drive the truck to not make to much noise and see if it solves the problem. If it does then that is your problem as they used to clog up. Especially with 262,000 on the truck. WAs the truck timed right after you took off the intake?
