AIR CON + pressure?

I have a 1997 Peugot 406 1.9td which I have fitted an air conditioning unit from a 1995 model of the same car.

I want to test as much as I can before I re-gas.

I have not re-gassed the unit yet and was wondering if I turn the aircon on should the fridge motor engage, or does it have to be gassed?

No if the system is wired right the low pressure cut switch should keep power from getting to the compressor until it reads enough pressure on it. Pull a vacuum on it and see if it holds it
