I am replacing my engine with 188,000 mi after a water pump pulley failure with a used engine that has approx 164,000 mi. What seals/gaskets or other easily accessible parts shlould be replaced while the engine is out of the car? I already intend on the rear main seal and valve cover gaskets.

If you don't know the maintenence history of the engine, I would also install a new timing belt and water pump. Other than than - besides tune-up parts, of course - just give it a good visual inspection. Used engines can sometimes be a bit of a gamble.

IS it MUCH easier to replace tb/wp while engine is outside of the car. I bought the entire car salvaged from its original owner. Dealer service record indicates tb/wp service was done at 95 K. Is it worth doing it now to save time, or just to avoid doing it in the next 15-20k miles?

If this were my vehicle, I would do it now while the engine was out. If the timing belt and water pump were done at 95K, they already have 70K miles on them. I'd put them on before the install.
