Can you explain what is happening?

We crank and crank, give it some gas, it turns over and starts but will only stay running for 10 seconds, if we try to flutter the gas pedal it usually dies immediately. However when we unplugged the Idle air control valve, it cranks, starts and runs only at an idle.

best you run a diagionstic scan and get the fuel pressure tested with an appropriate gauge.
