I am hearing a noise that I think is coming from the idler pulley assembly. Like a ticking. Do I need to replace the idler pulley and if so, is it only held on by that one bolt?

If you remove the belt, spin all pulleys by hand, any that have a roughness or are hard to spin, replace, the three usual suspects are idler, tensioner, and A/C, Idler and tensioner are held by one bolt, then pull off, install is the reverse of removal! The other is the alternator, if it has a roughness, replace the whole thing, that's due to bad bearings inside it!
