why when i conect the coolant sensor , the fan turn off?

The coolant sensor lets the fan know when to come on. If engine is not warm enough to need the fan on then the sensor will not allow fan to run. If engine is starting to overheat but fan still will not come on then it is because your sensor is faulty.
