I have a 1985 Mazda RX-7 with a 12A Rotary, 173k miles. Had a problem with my car on the highway, my engine would slow down on its own when I reached about 80 mph. I sprayed the carb with carb cleaner and replaced the vacuum lines and a few I was missing. Now my engine bogs down at about 4500rpm on each gear and if I try to floor it, my car shakes and eventually slows to a stop. Been stuck trying to fix this several times on the side of the highway. Not sure what I should do, please help me out.

Change your fuel filter. It maybe be restricting your fuel only enough to bog it down at high rpms.
