2003 Mazda B2300 temperature guage reading

I suspect the thermostat is no working correctly as the water temperature is never hot. The temp gauge reads cool- just on the gauge above the 'C' mark. Where can I find the thermostate, and can I change it easily. I have a good working knowledge of how to repair engines.

Drain coolant remove electric connector then lower hose then three bolts of housing
