Had engine replaced May 2017. Now have a small oil leak and when I did oil change last week, guy said there was no oil basically. He said to take it back to other shop that replaced motor. I was watching them and they were pushing up on something from under the car. I went out and asked and they said the bolts from the motor mounts were missing? Only two out of eight were there. I asked if they had touched it during the motor replacement and was told no. They said they must have fallen out? Or someone was trying to steal the catalytic converter and took them out. Is this possible? Thank you for any help! They did replace the bolts/screws for me and said that this should fix the oil leak problem.

It is a wonder the engine did not lockup because of no oil.
Fixing motor mounts is not going to fix an oil leak as far as I know.
You never did say which engine is in this. You could just give me the eighth digit of the VIN number, if it is a K, it is the 3.7, N or P a 4.7 and 2 is the 5.7.
I do not see how someone can replace an engine without removing the motor mount bolts.

Could these missing bolts/screws cause other problems?

I was going to say that. I would search for a different shop to do the work on your car.

I do not think missing two out of eight would cause a problem. I was more concerned about no oil.
You had better have someone check real good for an oil leak and most likely a massive one if it has not been that long since that engine was installed.

The engine is under warranty with them. Two years labor and three years engine. Six out of the eight were missing!

Oh, I read that wrong. Still, it only holds in the engine.
Did someone install the other six yet and torque them down?
Has anyone found the cause of the no oil or found the oil leak?
I see the engine has to be supported from a lift fixture, so getting them bolts in, someone might need that support fixture and hopefully not having them other six bolts in did not damage anything.

They did put them in for me. I watched someone while he was replacing them. I do not know what torque means. Are they special bolts? They told me with the bolts in, it was straightening something and there would not be any more stress on the hose and it should not leak anymore. You tend to believe a mechanic when he tells you something, but today was beyond belief. So these motor mounts, actually hold the engine up? I appreciate all your time and help this evening.

Torque means to tigthen to specification and yes the bolts help keep the engine in, up and secure.
