If i'm doing a head job on my pt, should I replace anything while at it?

Hello and thanks for donating

You may choose to replace the timing belt, head bolts and all of the upper gaskets (intake, exhaust etc.). Also have the cylinder head tested for warpage or cracks. Aside from this, nothing else is necessarily needed while the head is off.

Thanks, could the fact that coolant has leaked into the engine (found out when I took off spark plug, and found coolant) possibly have damaged anything else? What should I check?

No, just be certain to drain the engine oil and replace it because coolant and oil do not mix well.
